Diva Q Coconut Curry Shrimp

24 large shrimp
1/2 can coconut milk
1-2tsp curry (depending on how much you like it) mine was a very light colored one.
1/2 pkg spaghetti cooked
2 red peppers sliced thin
2 carrots sliced thin
1/2 onion sliced thin
flat leaf parsley chopped
4 cloves garlic
2 tbsp evoo

On a medium high heat grill shrimp until just about opaque then set aside.

sautee the garlic in the EVOO until nice and brown remove. Add onions and carrots sautee lightly add red peppers. Add coconut milk and curry bring to a simmer and add grilled shrimp -serve over hot noodles.
