12 lbs ground beef
4lbs mild italian
500 gr. bread crumbs
4 tablespoons garlic powder
1 cup ketchup
4 tablespoons sriracha chili sauce
1 tablespoon salt
1 tablespoon pepper
2 tablespoons lea & perrins
1 cup freshly grated parmesan reggiano
2 onions chopped
1/8 cup fresh parsley
1 tablespoon oregano
In a very large bowl mix all of the ingredients very well. The texture should be lightly moist but not dry. Add more bread crumbs if needed. Fill 8 – 2lb loaf pans. Chill for 3-4 hours.
Smoke indirect at approx 250 for 1 hour until meat has set shape.
Remove meat loaves from pans and return to grill.
Continue to smoke indirect (approx total time 2 1/2 hours) until internal temp reaches 160
